Joy of Uncooking
My darling husband has posted a few pictures of last night's dinner. This is becoming typical of our everyday fare. He didn't give any detail about what was in the pictures so I thought I would elaborate a bit.
The first picture is marinated corn on the cob. A few of the marinade ingredients include Thyme, olive oil, lemon juice, and apple cider vinegar. It is very popular here now. The third picture is of a spinach and arugula salad tossed with tomato mint vinaigrette, avocados, tomato wedges, and pine nuts. Tasty. Last but most certainly not least is a fruit pie that could have been dinner all by itself, in my opinion. The crust is made with almonds, dates, cinnamon and sea salt and has the consistency and flavor of a really good oatmeal cookie. The filling is made by strategically layering banana, pineapple, shredded coconut and strawberries. It tastes too good to be that simple. You would swear there is some secret ingredient that you would gladly pay $95.00 to drive an hour and a half away from home to spend eight hours in a class to learn how to make it (among other things). That is all I am sayin', it is that damned good. We also had Mint Juleps sans alcohol
Today I am finishing up some sun-dried tomato basil garlic Essene bread in the dehydrator and making nut ricotta, pesto and marinara to layer over the bread for pizzas later. We are addicted to these things. So good.
